Three Ways to Enjoy Strawberries: Parfait, Spoon Cake & Chia Pudding

In this blog post, we're going to explore three irresistible strawberry-based dessert recipes that are perfect for satisfying your sweet cravings. From a refreshing Strawberry Parfait to a warm and comforting Strawberry Spoon Cake, and a healthy Choco-Strawberries Chia Pudding, these recipes cover a spectrum of flavours and textures to suit every dessert lover's preferences.

1.Strawberry Parfait

Ingredients

  • 1 pint strawberries, trimmed and sliced (about 2 cups)
  • 1 lemon, zested, plus 1 tablespoon lemon juice
  • ¼ cup confectioners' sugar
  • ½ cup whipping cream
  • 1 cup fresh ricotta

Preparation

  1. Put strawberries in a bowl and add 1 tablespoon lemon juice. Toss with 2 tablespoons of confectioners' sugar and set aside.
  2. Make the ricotta cream: In a medium bowl, beat whipping cream with a whisk until soft peaks form. Add the remaining 2 tablespoons of confectioners' sugar, then fold in ricotta and lemon zest.
  3. Spoon the strawberries into 4 dessert glasses. Top with ricotta cream and smooth to cover. Refrigerate for up to 6 hours, but serve at cool room temperature.

2.Strawberry Spoon Cake

Ingredients

  • ½ cup/115 grams unsalted butter
  • (1 stick), melted, plus more for greasing
  • 5 ounces/145 grams frozen and thawed or fresh, hulled strawberries (about 1 cup)
  • ⅔ cup/150 grams packed light brown sugar
  • ½ cup/120 milliliters whole milk, at room temperature
  • ½ teaspoon kosher salt
  • 1 cup/130 grams all-purpose flour
  • 1 teaspoon baking powder
  • Vanilla ice cream, for serving

Preparation

  1. Heat oven to 350 degrees and grease an 8-inch (square or round) baking dish with butter. Set aside.
  2. Using your hands or the back of a fork, mash the berries to release all their juices, and stir in ⅓ cup of the brown sugar. Set aside.
  3. In a medium bowl, whisk together the melted butter, remaining ⅓ cup brown sugar, milk and salt, then add the flour and baking powder and continue whisking just until the batter is smooth. Transfer the batter (it's not much) to the greased baking dish, and spread evenly into corners.
  4. Spoon the strawberries and all their juices over the top of the cake batter. Place in the oven and bake for 20 to 25 minutes, or just when a toothpick comes out clean in the center. Remove from the oven and allow to cool for 3 to 5 minutes before spooning into bowls. Serve warm with ice cream.

3. Choco-Strawberries Chia Pudding

Ingredients

  • 36g of chia seeds (1/4 cup)
  • 200 ml of plant milk (1 cup)
  • 30 grams (1 scoop) of choco protein
  • 1 tbspoon cacao powder

Preparation

  1. Mix it all together in a blender and add strawberries or for extra layers, you can add granola, oatmeal cookies or any other fruit.
