Delicious Christmas Recipes: Easy Dishes for a Festive Celebration

HoHoHo... it's the most wonderful time of the year! A lot of people celebrate Christmas with family and friends over lunch and we have prepared the most delicious Christmas 3 course lunch exactly for this special occasion. Get your kitchen utensils and baking tools ready and get cooking, the recipes are easy to follow.

 

Winter Salad

Numbers of servings: 4-5
Time to prepare: 10 min

 

Ingredients:

  • 1 can of lentils
  • 1/2 pomenagrate
  • finely sliced cabbage
  • cooked pumpkin
  • spring onion
  • Sauce:
    • 3 Tb reduced salt Soya sauce
    • juice and pulp of 1/2 orange
    • Olive oil
    • nut butter

 

Directions:

  • In a big bowl add all the ingredients
  • Sauce: add all the sauce ingredients and mix well.
  • Add the sauce on top of your salad and mix everything well!

 

Cauliflower Lasagna Cannelloni

Numbers of servings: 5
Time to prepare: 30 min

 

Ingredients:

  • 10 Lasagna sheets
  • 1 cauliflower
  • Look at our vegan Besciamella Sauce here
  • Bosh vegan cheese
  • salt, pepper, nutmeg and olive oil

 

Directions:

  • Preheat the oven at 180 C
  • Soak the dried lasagne sheets under boiled water for 5/7 minutes
  • Cut the cauliflower and cook it in the microwave for 6-10 minutes until it softens ( if you don't have a microwave boiled it for 5 minutes)
  • Roll in each lasagne sheet a piece or two of the cauliflower
  • Put all the rolled lasagne sheet one next to the other in a baking tray and the besciamella sauce and the nutritional yeast on top
  • Let cook it in the oven for 20 minutes

  

 Christmas Cookie Tree

Number of biscuits: 13
Time to prepare: 10 min
Rest: 30 min
Bake: 25 min

 

Ingredients:

  • 200gr rice flour
  • 1 egg
  • 20 ml of sunflower oil
  • 40 gr of sugar or erythritol
  • 100gr of yogurt
  • To garnish
    • Cinnamon
    • erythritol

 

Directions:

  • In a mixing bowl stir the flour and erythritol
  • Add the egg and yogurt and 10ml of oil
  • Work the dough with your hands
  • Leave it to rest in the fridge for 30 minutes
  • Preheat the oven at 180 C
  • Take the dough cut in half and create from it 12/13 small balls
  • roll the balls in a plat with mixed cinnamon and erythritol
  • On a baking tray add the biscuits to create a Christmas tree
  • Bake for 25 minutes and serve!
